They are the pinnacle of the culinary experience, the sine qua non of dining if you will. Certain regions, certain times, or certain chefs have introduced the palates to dishes so singular, so ground breaking, and masterful that they become absolute 'must stops' for those of us who have Epicurean leanings.
To that end, we at Bitesized are going to introduce a recurring series wherein we go in search of locations here in our beloved Valley that feature some of these glorious dishes. We will provide you the proper background on the dishes as well as the places here that feature them. We also will let you know if we feel that the restaurants featuring these dishes adequately captured their essence.
Later this week our first adventure begins in the quaint colonial town of Puebla, Mexico the reputed birthplace of Mole.
